Sodium food labels are easier to read when you follow the same order every time: serving size, milligrams, percent Daily Value, comparison basis and overall food context. That sequence prevents a tiny declared serving from looking unusually favourable and keeps a population label benchmark from being mistaken for a personal medical target.

Quick answer: On a U.S. Nutrition Facts panel, check the serving size first. Find sodium in milligrams per serving, adjust for the amount you expect to eat, and use % Daily Value as a comparison guide. For two similar products, align the serving weights before choosing. If a clinician has set a different limit for you, that plan takes priority.
Scope note: This guide is general nutrition education for adults. It uses the U.S. label as its main example and separates it from WHO guidance, UK salt labels and Australia/New Zealand panels. It does not diagnose high blood pressure, kidney disease, heart failure, liver disease or a blood-sodium disorder.

Sodium food labels: the five-check map

The five checks are deliberately simple. They answer different questions, so skipping one can change the meaning of the rest.

  1. Serving size: What amount does the panel describe?
  2. Milligrams: How much sodium is in that labelled amount?
  3. Percent Daily Value: Is one serving relatively low or high against the U.S. label benchmark?
  4. Common basis: Are two products being compared at the same weight or volume?
  5. Whole-food context: What else does the food contribute, and how often will you eat it?

No single check tells you whether a food is “good” or “bad.” A soup used as a full meal, a sauce used by the spoonful and a bread eaten several times a day have different roles. The point of sodium food labels is to make those roles visible enough for a realistic choice.

Check 1: start with the serving size

Every number on the Nutrition Facts panel is anchored to its declared serving unless the package also provides an additional column. If a container lists two servings and you eat the whole container, the sodium contribution is usually twice the amount shown for one serving. If you eat half the serving, it is half.

That sounds obvious, but serving sizes can differ between brands and countries. The amount may be shown in cups, pieces or another household measure alongside grams or millilitres. The household measure is convenient; the metric amount is often more useful when you want to compare two similar products.

Hypothetical example: Product A lists 360 mg of sodium for a 30 g serving. Product B lists 420 mg for a 45 g serving. Comparing 360 with 420 alone makes Product A look lower, but the servings are not equal. Convert both to the same weight before deciding. These numbers are examples for arithmetic, not product data or a dietary prescription.

Also compare the serving with what you actually use. A tablespoon-sized serving may be realistic for a condiment but not for a food you pour freely. Sodium food labels describe the manufacturer’s declared basis; they cannot observe your portion.

Check 2: read milligrams and do the package math

Sodium is listed in milligrams on a U.S. panel. Milligrams are the clearest number for calculating what your planned portion contributes. Multiply the sodium per serving by the number of servings you expect to eat. Keep the units consistent and avoid converting to grams unless there is a practical reason.

For a package with 480 mg per serving and 2.5 servings, the whole package contains 1,200 mg. If you split it evenly between two people, each share would contain about 600 mg. Again, this is arithmetic, not a recommendation to eat or avoid that food.

Watch for dual-column labels. Some products show values per serving and per package. When both are present, use the column that matches what you expect to consume. Do not add the columns together; they are two views of the same product.

The ingredient list can reveal where sodium-containing ingredients appear, but it cannot replace the milligram line. Sodium may come from salt, baking soda, curing agents, flavour enhancers or other compounds. Counting ingredient names does not tell you the total amount as reliably as the nutrition panel.

Check 3: use percent Daily Value as a benchmark

On the U.S. Nutrition Facts label, % Daily Value shows how much one serving contributes to the standardized daily label reference. Current federal rules use 2,300 mg as the Daily Reference Value for sodium for adults and children aged four and older. The FDA’s education material describes 5% DV or less per serving as low and 20% DV or more as high.

Those thresholds are comparison tools. They are not based on your blood pressure, kidney function, medicines, pregnancy, age, sweat losses or the rest of your day. A food at 20% DV does not diagnose excessive intake, and a food at 5% DV does not automatically fit every therapeutic plan.

Percent Daily Value is especially useful when serving sizes are comparable. If one bread provides 6% DV per similar slice and another provides 12%, you can see the relative difference quickly. If the slices weigh very different amounts, compare milligrams per gram or per 100 g before relying on the percentage.

The U.S. Daily Value should not be copied into another country’s label system without checking the local rules. It should also not be confused with the World Health Organization’s adult population recommendation of less than 2,000 mg sodium per day. One is a U.S. label reference; the other is global public-health guidance. Neither automatically becomes an individualized target.

Check 4: compare two products on the same basis

A fair comparison asks the same question of both products. First decide whether you care about the amount in your likely portion or the concentration in a common weight. Per-serving information can reflect real use. Per-100-g or per-100-ml information is better for comparing concentration when declared servings differ.

Australia and New Zealand nutrition information panels make this easier because the standard format shows average quantities per serving and per 100 g, or per 100 ml for liquids. Their regulator also notes that the food business determines serving size, so it can vary between products.

If neither package offers a common column, use a calculator. Divide milligrams by serving grams, then multiply by 100. A food with 300 mg in 40 g contains 750 mg per 100 g. A food with 360 mg in 60 g contains 600 mg per 100 g. The second has more sodium per declared serving but a lower concentration. Which matters more depends on the amount you will eat.

Compare like with like. A concentrated sauce and a ready-to-eat soup are not direct substitutes. A lower concentration can still contribute more sodium if the usual portion is much larger.

Check 5: keep the whole food and meal in view

Sodium is one part of a food. Also look at fibre, protein, saturated fat, added sugars, energy, allergens and the ingredient pattern when those factors matter to your task. A lower-sodium version that you dislike and never use is not automatically a practical choice. A familiar food with more sodium may still fit occasionally when the rest of the meal is built around less processed foods.

A food-first approach can start with vegetables, fruit, beans, intact or minimally processed grains, unsalted nuts and seeds, eggs, fish, meat, dairy or suitable fortified alternatives according to your needs and culture. Cooking more often can make sodium easier to adjust, but packaged foods are not morally inferior. Labels exist to help you compare them.

Sodium food labels outside the United States

Country matters. UK back- or side-of-pack nutrition information generally reports salt rather than a U.S.-style sodium %DV line. NHS guidance compares salt per 100 g and explains that some front-of-pack systems use red, amber and green coding. Those colours are based on that system’s criteria, not the U.S. 5% and 20% Daily Value guide.

Australia and New Zealand panels list sodium and show per-serving and per-100-g or per-100-ml columns. That makes direct concentration comparisons straightforward, but the declared serving can still differ by manufacturer.

Imported products can add another layer. Identify the country, nutrient name and units before comparing. Milligrams of sodium, grams of salt, % Daily Value, reference intake and traffic-light colour are related ways of presenting information, not interchangeable numbers.

WHO’s population guidance is not a packaging law. Its current fact sheet recommends less than 2,000 mg sodium per day for adults, equivalent to less than 5 g salt. The U.S. label Daily Value is 2,300 mg. The difference is real and should be named rather than averaged away.

Salt and sodium are related, not identical

Table salt is sodium chloride, so it contains sodium, but the two words do not mean the same quantity. MedlinePlus states that table salt is about 40% sodium. That is why a UK label can report grams of salt while a U.S. or Australia/New Zealand panel reports milligrams of sodium.

A rough conversion sometimes used in education is salt equals sodium multiplied by 2.5. Treat it as an approximation and check the label when one is available. For example, 0.4 g sodium is roughly 1 g salt. Do not compare 0.4 g sodium with 0.4 g salt as if they were equal.

Saltiness is also an unreliable measuring tool. Some foods can contain meaningful sodium without tasting intensely salty, while serving size, other flavours and individual taste adaptation influence perception. Read the panel instead of ranking by taste alone.

Terms such as “reduced sodium,” “low sodium” and “no salt added” are regulated claims within a jurisdiction. “Reduced” usually describes a comparison with a reference food; it does not promise a universally low final amount. Read the milligrams and serving size even when the front of the package sounds reassuring.

A practical shopping routine that avoids food shame

Use sodium food labels on the foods that contribute most often, not as a reason to audit every bite. Repeated purchases—bread, sauces, soups, ready meals, savoury snacks, deli foods or canned products—usually offer more useful comparison opportunities than an occasional celebration food.

  1. Choose two products that serve the same purpose.
  2. Check the serving size and servings per container.
  3. Compare sodium milligrams for the amount you expect to use.
  4. Align per-100-g or per-100-ml values if servings differ.
  5. Check the rest of the nutrition panel, allergens and ingredient list.
  6. Choose a version that fits taste, price, access, culture and your overall pattern.

You can also change the meal rather than hunt for a perfect product. Use less of a concentrated sauce, pair a higher-sodium component with unsalted grains and vegetables, drain and rinse canned foods when appropriate, or season home-cooked food with herbs, spices, acidity and aromatics. These are options, not rules for every condition.

Avoid compensatory restriction. One higher-sodium meal does not call for skipping meals, excessive water intake or unprescribed supplements. Return to your usual balanced pattern unless your clinician has given different instructions.

When the label benchmark is not your personal target

Sodium needs and safe limits can change with kidney disease, heart failure, liver disease, high blood pressure, some endocrine or fluid-balance conditions, pregnancy, age, medicines, heat exposure and prolonged heavy exercise. A registered dietitian or clinician can connect the label to laboratory results, symptoms, treatment and the rest of your diet.

Ask for tailored guidance if you have been told to follow a sodium or fluid plan; if you take medicines that affect blood pressure, fluid balance or electrolytes; if you are pregnant; or if kidney, heart, liver or endocrine disease changes your needs. Do not stop a medicine, start a salt tablet or replace a prescribed plan based on a package label.

Dietary sodium on a package is not the same as the sodium concentration measured in blood. Blood-sodium disorders involve water balance and health factors that cannot be diagnosed by looking at yesterday’s food labels. Sodium food labels support food decisions; they do not interpret laboratory tests.

Red flags: when label reading should stop

Seek urgent medical help for a seizure, loss of consciousness, or sudden severe confusion. These can occur in serious medical conditions, including severe sodium disturbances, and should not be managed by changing food or water intake on your own.

Contact a clinician promptly for new or worsening swelling, marked weakness, persistent vomiting or diarrhoea, or concerning symptoms after a major change in fluid intake—especially if you have kidney, heart, liver or endocrine disease or take medicines that affect fluid balance. The cause may have nothing to do with dietary sodium, which is why assessment matters.

If you feel well but are uncertain about a label, the situation is usually not urgent. Photograph the panel, note your usual portion and bring the information to a clinician or registered dietitian. That is more useful than trying to force a universal number onto a personal situation.

Common questions

Is 5% Daily Value always low sodium?

On a U.S. Nutrition Facts label, the FDA uses 5% DV or less per serving as a low comparison level. It is not a guarantee that the food fits a prescribed plan, and it applies to the labelled serving.

Should I compare sodium per serving or per 100 g?

Use per serving to estimate what your likely portion contributes. Use per 100 g or 100 ml to compare concentration when two products declare different servings. Often both views are useful.

Does “no salt added” mean sodium-free?

No. A food can contain sodium naturally or through other ingredients even when no salt was added during processing. Read the sodium milligrams on the panel.

Can sodium food labels tell me whether my blood sodium is high?

No. The package reports dietary sodium in the food. Blood sodium is a laboratory measurement affected by water balance and health factors; it needs clinical interpretation.
